HOMEMADE MEXICAN CHORIZO
INGREDIENTS
3 pounds of ground beef
3 pounds of ground pork
1 1/3 cup of vinegar
1/2 cup of water
2 cups of red chile powder
2 teaspoons of garlic
1 teaspoon of black pepper 
2 teaspoons of oregano
1 teaspoon of cummin
2 teaspoons of salt
INSTRUCTIONS
Mix the seasonings with the vinegar and water with a hand or regular mixer.

Add the resulting mixture to the meat and blend well by hand.

Store in plastic bags in refrigerator or freezer. 

Prepare over low to medium heat.
SERVING SUGGESTIONS
Chorizo is traditionally considered a breakfast food used much like american sausage.  It can be served as a spicy side dish to eggs or combined with eggs or refried beans to make fillings for breakfast burritos.  Many people like to add onion or chopped bits of pepper to further flavoring.

However, unlike some American sausage, chorizo is not meant to be heated in link form.  It should be broken up into small bits; so, if you buy your Chorizo at a store, be sure to take it out of the wrapper before heating.
